One of my favourite recipes for pasta was a combination of watching a tv foodie programme and my own slant upon it....
ingredients are : (for 2/3 people)
2 chicken breasts
three cupfulls of your favourite pasta
2 leeks
1 onion
half a red pepper
a few say 4/5 button mushrooms
250ml double cream or elm lea
tomatoe puree
10/12 grapes
1 garlic glove
olive oil
Method
slice chicken breasts to smallish bite size pieces and quick fry until just about browned on outside and leave to rest whilst you
slice leeks, onions, wash thoroughly and cook in olive oil and a spoonfull of butter/marge until soft add sliced red pepper and sliced mu8shrooms in same pan cover and leave to rest
.......................................................................................................................................................................
cook pasta in the traditional way and whilst this is cooking add the chicken ,leeks etc to a pan (preferably a wok) heat to just below boiling and add the cream/elm lea, stir in two/three teaspoons of tomato puree, add garlic to your own taste preference, bring to the boil, just below simmering, and when the pasta is cooked add this to the wok, stir ,add halved grapes and serve
